Vinification Katsaros only believes in using natural fertilizers in the vineyards. The biological care at the vineyard is coupled with the limited yield from the 8-year-old vines. The grapes are hand-picked and yields are low. The wine is barrel-fermented and aged with frequent stirring of the lees for 7 months in 100% new French oak.
Taste Profile Elegantly formulated and clearly focussed on the nose, transparent on the palate with the "nutty" flavours characteristic of the grape.
