Vinification Katsaros only believes in using natural fertilizers in the vineyards. The biological care at the vineyard is coupled with the limited yield from the 20-year-old vines. The grapes are hand-picked. The wine is barrel-fermented and aged on the lees for 12 months in 80% new French oak.
Taste Profile This classic blend of Cabernet Sauvignon and Merlot from fully mature vines has excellent length and power. It can be drunk now but will undoubtedly benefit from ageing.
